DIY Popsicle Recipes

Every Monday we cover the topic called lifestyle.  We look for things that help to make your life more fun, tastier, easier, or better in some way. My daughter Niyah does a guest post from time to time and decided to cover something tasty and refreshing.  You’ll want to try your hand at these easy to make treats for sure.

Popsicles are the perfect treat in the summer. They’re cool, refreshing and not to mention– delicious! With these four easy DIY recipes, you won’t have any excuse not to make them…

Fudge Pops (For you chocolate lovers) Prep Time: 30min + freezing \ Servings: 20

Ingredients: 

  • 1/4 cup cubed butter
  • 1/2 cup all purpose flour
  • 4 cups milk
  • 1-1/3 cups packed brown sugar
  • 1/3 cup baking cocoa
  • 1 teaspoon salt
  • 2 teaspoons vanilla extract
  • 20 popsicle molds or disposable plastic cups (3 oz. each) and popsicle sticks

Directions:

  • Melt butter over medium heat in a large saucepan. Stir in flour until smooth; add milk gradually. Stir in brown sugar, cocoa and salt. Bring to a boil and cook and stir for 2 minutes or until thickened
  • Remove from heat, stir in vanilla and cool for 20 minutes stirring several times
  • Pour 1/4 cupfuls into popsicle molds or plastic cups; top molds with holders or insert popsicle sticks into cups. Freeze until firm.
  • “Try putting  some applesauce into some molds if you have them or in dixie cups with  sticks… If they are too thick you can add a tablespoon or two of apple juice…maybe a hint of cinnamon…”
or
  • “Blend 1 cup of strawberries with 2 c plain yoqurt and a tsp. of vanilla.  Then pour into your molds and freeeze. If you don’t have the yogurt you can dissolve 1 package jello with 2 cups of boiling water.. stir well .. add strawberries and 1/3 cup of sugar…blend and place into molds… “
or
  • “Use 6 ounces orange juice concentrate , 2 c plain yoqurt and 2 tsp. vanilla, place in blender and then put into your molds… these are my favorites.. They taste like creamsicles!!”

Blueberry Pomegranate Popsicles  Prep Time 3 minutes

Ingredients:

  • 1 (8 oz) bottle of POM pomegranate juice
  • 1 pint of fresh blueberries + extras for garnishing
  • 1 6 oz container of greek yogurt

Directions:

  • Combine all ingredients into the blender and pulse until combined. Pour into popsicle molds or dixie cups, add popsicle sticks (add extra blueberries for garnish) and freeze until frozen.
Tip: If your mixture isn’t thick enough to hold the popsicle stick in place, just cut a small slit in a square of wax paper, thread the popsicle stick through it, and then place it on top of the Dixie cup.  Remove wax paper once the popsicles are frozen.)

Thai Iced Coffee Popsicles  Prep Time 10 minutes

Ingredients

  • 1/4 cup sugar
  • 1/4 cup water
  • 1/4 cup almond extract
  • 1 cup strongly brewed coffee, cooled prepared with 1/2 teaspoon of cardamom added to coffee grinds
  • 2 tsp half-and-half

Directions

  • Boil sugar and water together in saucepan, stirring until sugar has dissolved.
  • Remove from heat and add almond extract.
  • Combine syrup with remaining ingredients
  • Distribute into ice-pop molds, add sticks and freeze for 8 hours
