lifestyle: 4 Tropical Recipes for Food and Drink!
Now that we’ve discussed all the ways you can capture that beachy vibe through crafts its time to taste it!
This first drink recipe is definitely summery and would be perfect to make on an evening spent sitting out in the backyard pretending you are at the beach!

Take your favorite seaside restaurant home with you! Light the tiki torches and eat outside!
Ingredients:
1 2-3 lb pork loin
2 Oranges 2 Lemons
1 teaspoon Garlic
1/2 teaspoon Rosemary
1/2 teaspoon Thyme
1/2 cup Moore’s Marinade
1/4 teaspoon Salt
1/4 teaspoon Pepper
Directions: Juice the oranges and lemons and mix the rest of the ingredients in with the juice. Take a fork and poke holes into your pork loin. Put the loin down in the marinade. Depending on what kind of container you marinate it in you might need to turn it occasionally. Marinate for 4-24 hours. It just depends on how together you are as to how long you get to marinade it! Grill it till it’s 145 degrees and then let sit for about 5 minutes so you don’t loose all the juice!
Fish tacos have a tendency to scare some people but those who’ve had them know just how good they are! I like this recipe especially because it calls for scallops instead!!
Ingredients:
1 1/2 cups pineapple, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 orange bell pepper, diced
2 avocados, peeled, pitted and diced
1 small red onion, diced
1 jalapeño, diced finely
1 pint grape tomatoes, halved
1 lime
salt to taste
1 pound sea scallops, thawed
balsamic vinegar glaze (store bought is fine)
fresh whole wheat tortillas
Directions:
Coat a non-stick pan with cooking spray and heat over a medium high flame until sizzling. Dry each scallops well with a paper towel, sprinkle lightly with salt and add to the pan. Sear on each side being careful not to overcook. Remove to a fresh paper towel.
Combine the pineapple and all the vegetables in a large bowl. Add the juice of one lime and salt. Stir gently until everything is just combined.
Dice the scallops in to large pieces. Assemble the tacos and sauce with balsamic reduction.
