Lifestyle Friday: 10 delicious ways to add more Kale to your diet!
It all started at the restaurant TRUE FOOD in San Diego, I fell in love with this kale salad
Kale is one of those veggies that many of us have a love/hate relationship with.
Most of of eat this nutritious vegetable because it’s good for us, not because we love it.
I’m one of those strange birds who happens to LOVE greens of all kinds!
Funny thing is, as a kid I couldn’t stand the sight of them and now my go-to veggies are collards, kale, brussel sprouts, spinach, zucchini, cabbage, asparagus and mixed baby lettuces.
I’ve only recently discovered that I also like my kale raw. The salads just taste more hearty, and I feel like I’m actually getting a better source of vitamins and minerals when I eat them.
I was largely influenced by an article I read a couple of years ago, which suggested that our diets should at least be 1/3 raw. Ever since then, I’ve tried to be more conscientious about including more raw veggies on the table.
I’ve either tried the following recipes or thought they looked delicious enough to pass the Jackson household test.

1. Kale chips look easy enough to make, and I’m sure are healthier than the store bought versions.
2. Green juices with kale can be an acquired taste and a bit bitter, go light on the kale your first try
3. This is my go-to soup in the winter, it’s very filling and has the right balance of heartiness and a slight sweetness.
4. This salad is one I can’t wait to try5. Any thing with Sriracha on it…count me in!
6. Lemon Parmesan Kale salad
This salad is similar to what I had in San Diego. I loved it so much, I went back for more.7. I like the idea of substituting kale for a

8. Apple, Baby Kale, Turkey Quesadilla
I’m pretty sure these would be a hit at home
9. Sneak a little kale in the Mac and Cheese ….victory!
10. Kale caesar salad
This is a great alternative to traditional caesar
Sauteed Kale
The queen of greens sauteed, is just plain good.
