According to Wikipedia, a foodie is a gourmet, or a person who has an ardent or refined interest in food and alcoholic beverages. A foodie seeks new food experiences as a hobby 

By my own definition, a foodie is someone who enjoys yummy food and seeks different ways to make it taste good. Period.

I cook alot and without a doubt, I get tired of the same old same old.

To keep it interesting, I find myself test driving new spices, exchanging recipes with friends, and sometimes I’ll use components of a recipe to inspire an idea, and then add my own spin to elevate the flavor.

Preparing these dishes made me feel very much like a foodie 🙂

Leftover flank steak

A few peppers (red, yellow, jalepenõs), mushrooms, onions, and brussel sprouts took this leftover flank steak to a delicious new level.  I added sesame oil, soy sauce, ginger, and agave and served it over basmati rice.

Chili

One of my favorite comfort foods for the winter, is great served with a crusty bread and red wine.  Just to get our veggies in, I topped the rice with stir fried zucchini.

Homemade Egg rolls

Thanks to my friend Nghi, these are a family favorite.  The fact is, egg rolls are easier to make than you think.  All you need are egg roll wrappers, filled with any combination of veggies, seafood or meat. You then roll them up and deep fry them to a golden brown.

Seafood fetish

My name is Ricci Jackson and I have a seafood fetish.

Fish, lobster, crab cakes, king crab, soft shell crabs, oysters, mussels, calamari, I love it all.  Seafood is super easy breezy. Since it cooks up pretty quickly, serve it with a loaded baked potato, and salad and you have a quick, tasty meal.

Shrimp from Trader Joes

Thanks to my friend Sherry, I am loving these tasty shrimp from Trader Joes.

Steam them up, serve them with drawn butter, a squeeze of lemon, and dash of Old bay….good, good, good!

2 easy additions, were asparagus wrapped in turkey bacon (20 min. at 350) and a baked potato with sour cream and chives.

Tai meatballs with egg rolls

This dish was served with brown rice and topped with basil leaves. The recipe called for coconut milk and red chili garlic sauce for added heat.
