That’s Pinterest-ing! Easy, Tasty Recipes, from my pinboards

We are hosting Thanksgiving dinner this year and I thought I’d better “kick it into gear” and plan my menu.

My menu consists of the following:

Turkey and dressing, Candied sweet potatoes, macaroni and cheese, collard greens, roasted brussel sprouts, endive salad, fried oysters, cranberry sauce, carrot pudding,  corn pudding, and stuffed mushrooms.

For the past several months, I’ve created pin boards of delicious recipes on Pinterest and now it’s time to put some of them to the test.  Here are a few I’ll be trying.

Apple-Poblano Roast Turkey

A hint of Southwest spice and chile heat  blend with sweet apples …doesn’t that sound good? Get the recipe here

This is my usual go-to recipe and back up plan just in case i don’t have time to brine my bird (above recipe)

Herb-Butter Roasted TurkeyI typically love using butter to baste my bird because it makes the skin beautiful, crisp and golden;  Placing fresh herbs beneath the skin enhances the flavor and creates an amazing aroma when baking.

There’s a tradition in my family where my mom makes the best fried oysters this side of heaven.  Yes they’re fattening, but hey, they are scrump-delicious!  She uses a tempura batter, which makes the oysters, light, crisp and fluffy all at once.

 There’s always some hearty greens at the table (collards or kale or a mix of both.

I usually cook mine with garlic, jalapenos and olive oil in a pressure cooker, but this year I’m trying this recipe.

This is my hubby’s favorite, so I’ve got to include them on the menu.

Caesar Salad Spears

I like the idea of having a number of appetizers. These mini caesar salads are easy to make and replaces the typical garden salad.full recipe

This menu is loaded with “fat free” items…..okay, well maybe not.

I almost feel guilty talking about the dessert table.  But the must-haves are Homemade apple pie, sweet potato pie and homemade ice cream.  Did you gain 20 pounds like i did just reading this?
